Captain / Lead Server

Nightshade Noodle Bar is a 30-seat French-Vietnamese tasting menu restaurant in Lynn, Massachusetts, led by Chef/Owner Rachel Miller, a James Beard Award finalist who runs both the kitchen and the beverage program. That's rare, and it matters: the food and the glass speak with one voice. We're recognized by the Michelin Guide, we're building something extraordinary in a place no one saw coming, and we are nowhere near finished. The goal is simple: to be the best team we can possibly be, and to be exactly that for every single guest who walks through the door. We want people who are hungry. Who want to climb, want to learn, and show up ready to go hard every day.
The Captain/Lead Server works hand in hand with our Maître D', and takes part in menu coordination with the chef in real time. You read a table before they speak. You close a pairing without it ever feeling like a sale.
You hold service to a standard as exacting as the kitchen's, and you love that it's hard. This isn't a stepping stone or holding pattern. It's a lead role in something being built to last, and we want someone who's fired up to build it with us.
WHAT WE OFFER
$85K–$95K+ total compensation, transparently structured (hourly, Admin Fee + tip pool)
A four-night week, Thursday through Sunday (a serious career and a real life)
A beverage program designed by the chef-owner, and autonomy to apply knowledge to pairings

A direct hand in floor culture, training, and the standard as we climb
WHAT WE’RE LOOKING FOR
A captain who has worked where the details are non-negotiable
CMS Level 1 minimum or WSET II+ equivalent strongly preferred
Massachusetts Allergen Awareness Certificate
Fluency in tasting-menu operations, sequencing, and ability to balance multiple tables with different menus
Someone who understands and can maintain VIBE, lights, volume, energy
The instinct to lead quietly and the composure to never show the strain
Someone who reaches for the stars in their service and within themselves

Our cocktail program is built by the chef-owner herself, with the same intention as the food: French-Vietnamese, ingredient-driven, nothing arbitrary. We're not looking for someone to execute it. We're looking for someone to push it. A bartender who's always building: testing, batching, chasing down the next idea and bringing it to the menu without being asked. The kitchen creates relentlessly. We want the bar to go with it, drink for drink. You'll work under our Maître D' and alongside Rachel on the beverage side, with real room to create and put your name on what we pour. Service is service here, whether you're building a drink or reading the room from behind the rail. Come hungry. Build something that gets us noticed.

WHAT WE'RE LOOKING FOR
A creative engine: you show up with ideas, projects, and a hunger to put your name on the menu
3+ years behind a serious bar, in fine dining or a real cocktail program
Spirits literacy: distillation, region, production, not just pour and shake
CMS Introductory, WSET 2, or comparable education preferred
TIPS or equivalent responsible-service certification
Massachusetts Allergen Awareness Certificate
Precision, economy of motion, and composure when it counts

Who want to climb, want to learn, and show up ready to go hard every day.
The chef-owner is cooking every service, and is heavily involved in beverage and service operations. You'll work the floor under our Maître D' and captains, on a small, serious team. Show up hungry and there's real room to rise. This floor moves, it's demanding, and the right person wouldn't want it any other way.
